I'm in Seattle for the first half of next week for a conference and would like an recos on cool cultural places, like museums or galleries or community hubs that are innovative and fresh.
I've pegged EMP already but would like something else to see.

Interesting - we were talking about this last night. I've never been, but have heard good things about the underground seattle tour

I was at the EMP a few years back. Could be different now, but we found it sort of underwhelming. If you have kids, though, they'd likely get a kick out of the interactive aspects of the exhibits.
Personally, I just like casually walking around Seattle. There are a lot of neat little spots you stumble upon. One short trip from the city that's worth making time for is Freemont. There are some nice cafes, book stores, and other weird little shops (as well as the Freemont troll).
And do try check out the piroshki shop in Pike Place Market. (Greasy goodness.)

Seattle's a good place to walk around. There's great food made from local ingredients if you're into that sort of thing. You could google for Anthony Bourdain's Layover episode on Seattle.
Sitka & Spruce was great.
Quinn's pub had some pretty sophisticated fares for a pub.
Elysian Brewery has a nice selection of local brews.
(the previous two are on a street with lots of nightlife)
The Walrus & the Carpenter, the tar tar was awesome.
Tilikum Place Cafe near the EMP museum had good food.If your conference is in the bell harbour centre, you should walk towards belltown. Lots of nice little pubs and it's really easy to find weed there =)

Bumping this because I'm trying to plan a vacation for my wife and I this summer and we've never been to the pacific northwest at all. I think being there for 7 - 8 days could offer a lot of options for doing things in the city and taking drives to national parks and such.
Would it be best to stay in the city itself or are there options for cool bed and breakfasts or boutique hotels within a few hours?

The recommended parks are good, but be prepared for sudden bursts of shit weather, we're kind of transitioning out of the rainy season at the moment.

For food, try Tallulah's on 19th ave on Capitol Hill (easy uber/cab ride if you're staying downtown). 15th ave also on Capitol Hill has great coffee, restaurants, bars (Liberty is great for cocktails, Hopvine good for beer nerds), and there's a retail weed shop right nearby.
It's also a nice walk from 15th Ave to Volunteer Park (which is great if it's not raining). The Asian Art Museum is there and usually has great exhibits.

To OSFA:
I stayed in the Palladian Hotel recently. It's right downtown and was actually quite nice. You're in the middle of everything too so you can walk to Pike Place Market, walk to Westlake Mall to get on the Monorail to take you to the Space Needle. Seattle Art Museum is just a few blocks away too.
