My Mum used to do occasional catered meals for the Duchess of Northumberland, back in the eighties, and I will never forget seeing sat in the kitchen an Aspic mound of horror - I think it was fish and vegetables something, can't specifically mind what, but I just remember the disgust I felt about savoury embedded in a spastic jello tomb horror show.

I was so irritated by my first French Dip sandwich experience that I tried again, with changes. Quite a few of them.
First of all, the beef wasn't roast beef, it was medium rare rump/sirloin steak, sliced gossamer-thin after chilling. Way, way, way less time and fucking around compared to a whole roast beef.
Secondly, that baguette experience the last time really put me off. So, I baked my own rolls: high-hydration things engineered to not shred the roof of my mouth while still being able to survive having gravy-sodden beef thrown in them, then dipped.
Thirdly, I didn't bother with the caramelised onions from the last time. They added nothing interesting.
Fourth, I tweaked the gravy itself. It was much more of a red wine reduction sauce, made with reduced oxtail beef stock I had made a while back and froze in portions, and the deglazing liquid from the steaks, along with their resting juices. Sticky, gelatinous, hyper-beefy goodness.
Lastly, Dijon mustard on both halves of the bread.
Much, much better. This was fucking delicious, and I'll make it again.
- Ya lost me at "didn't bother with the caramelized onions". What the hell??Akagiyama
- Elevating the shit out of it!stoplying
- I don't know what it is but I can't stand French dip. Reminds me of kitchen sink juice.cannonball1978

My wife and I celebrated our 16th anniversary today by going to a local Thai restaurant for lunch. She ordered a wonton soup appetizer and when it arrived it was clearly store-bought shumai dumplings in the soup and not wontons. To me, this was not a big deal. We're out celebrating. For her, it was simply unacceptable. She told the waiter that these were shumai, and not wontons. To which he replied "Thailand calls those wontons. Our chef is from Thailand and that's what these are called there." Ballsy from him - but that infuriated my wife that he would try to pull one over like that. My role was to not escalate the situation - which I'm really good at - and just have our meal - which we did. So we finish up, have our leftovers boxed up, pay the check and then proceed to leave the leftovers on the table.

I'm trying to convince my wife to let me make a specific roman chicken w/potatoes recipe that uses anchovies (combined w/white wine, vinegar, preserved capers etc — salty acidic stuff) and she's battling me a bit.
She's nerdy for all types of jarred / canned olives and absolutely loves Worcestershire sauce (which actually has anchovies in it)... but she's battling me.
Do I just make it and blow her mind? I've had a version of it in the past... It's pretty much this: https://cooking.nytimes.com/reci…
(although I don't know why they call this a cacciatore... I thought that usually had tomatoes?)
- I think it's called that because it was a typical hunters' recipe; there are recipes here with that name using partridge, hare...OBBTKN

Thanks for the birthday messages. I went here for Michelin starred food. Apparently they've only recently received there star and haven't adjusted there prices yet. The food was really good, but i'd had Covid and my sense of taste was around 20% it's usual abilities!!- Lol, looks very fancy but I am far too much of a basic twat to enjoy that sort of fayre, haha. Looks wonderful though!Nairn
- Brian Eno said something along the lines of food is stylised beyond all recognition. But then, how long have we been eating and playing with our food.Ianbolton
- Yet here we are, just trying to appreciate a decent potato wedge or egg sandwich. Yet we do shit just because we can. For no other reason. I like that!Ianbolton
- he made the point FAR better than i just did.Ianbolton

Denmark pushes for EU ban on ‘turbo chickens’ as secret footage causes outrage
, producer Christian Tvergaard broke Danish law by giving chickens only half the amount of darkness per day that is required, in order to encourage them to eat more.
