    (Grandma’s Recipe from Colima, MX.)

    QBN I owe you guys a lot and don’t mind sharing.
    Here is the recipe please respect the source

    Ingredients:
    8 Haas Avocados
    ½ Medium White Onion (Diced)
    1/3 Bunch of Cilantro
    3 Serrano Peppers (diced and seeded)
    1 Roma Tomato (diced and seeded)
    1-2 Key Limes (or common Persian Lime if you cannot find Key Lime)
    Medium grain Sea Salt or Kosher Salt

    Take all avocados and place them in bowl only smashing slightly with a fork. (keep two pits in the bowl.)
    Take half bunch of nice green and fresh cilantro and cut the bottom inch of the stems, just the part that might look dead or yellow. Do not cut all stems or pluck leaves since most of flavor is in the stems, they are needed. Place sprigs in a bowl of water fully submerged for about 5 minutes to get all dirt out. (Pat dry with paper towel thoroughly before using)

    Take the Roma tomato and cut it in to quarters. Now slice the seeds and liquid inside as to leave only meaty peel behind. Discard all liquid part of tomato as it will water down your guac! It will ruin flavor and consistency; this is a common mistake. Doing this will set your guac apart from most. The goal is only to add some color in the guac with the tomato. If you want “salsa” make salsa.

    Now take onion cut it in half and put away one half. Too much onion will ruin the taste of the avocado!! Dice the half you are using evenly in to half inch squares. Do not allow random size pieces in the mix and make sure all peel or green parts are discarded. Take all of this and toss it in the bowl.

    Take the three good size Serrano peppers and cut stems off. Depending on how sensitive to spice the crowd is you should seed one or two of the peppers. I usually only seed one pepper. IMO Guac should have a little ‘kick’, after all it is from Mexico. Take the peppers and slice them long ways until you are left with 12 strips. Now take your knife and remove all seeds and veins from 4 strips, or one pepper. This is where the heat lies. Now take those strips and slice them long way one more time to make more strips. Bunch them all up in your hand together keeping them straight and even and dice them up as small as you can. You should have all skin, veins and seeds except for the ones you decided to discard. Now throw all this in to your bowl. -- IMPORTANT-- Be careful not to touch your face or any other sensitive part of your body during this process!! If you are really scared you can wear a pair of latex gloves.

    Now stir the cilantro in the bowl of cold water to make sure all dirt is gone. Take it out and dry it thoroughly with a paper towel. Take all the cilantro you are using and bunch it up in to your hand in to a little ball. Now dice the ball with your knife thoroughly. Just make sure you are not leaving any long stems and throw all this in your mix.

    Now the trick is to simply “fold” the ingredients in the bowl do not stir them wildly as to create a soup! Take the limes and cut them in half make sure they are not yellowish or pale on the inside this will also make the guac taste bad. Squeeze the limes in to the mix making sure no seeds go in to it. Then use the Sea Salt or gourmet kosher granulated salt (not table salt) to flavor.

    Use chips to taste. If you are going to be storing it for a bit place saran wrap over guac and bowl as to not leave air (air causes oxidation which makes your guac brown) and place in fridge you should use within the hour or two..

    I've been vegan since the start of the year, and at first it was quite exciting to try different new recipes, vegan versions of staples and new items, different ways of cooking.
    Then I got fucking bored of it.
    And tired and spending so much time and money trying to find decent ingredients, none of them are cheap here in the midwest.
    Then I became piss-poor, work dried up and my wife lost her full time job, and her student pell grant and our lodger moved out. We lost our health insurance, so I can't get my regular medication which has caused me to become depressed and put on weight, and not able to conentrate on my work. We had no money for food and lately have had to go around the food banks and take whatever we could get, most of which was not vegan. Managed to keep the cable on, and the other utilities, but with one client after another bailing I'm just done, too far down the hole. I'm still vegetarian, but the days of spending $30 on ingredients for one meal are over. I tried, but it was just not possible to be full and get everything I needed from the dried beans and freezer burned cookie dough that I was left with a few weeks ago.

    Yep, what srhadden wrote on the first page is really, really true but I happened on it by accident.

    I was diagnosed with something called Ankylosing Spondylitis and the only way I can eliminate the pain is not to eat anything with starch in it.

    Pretty much no carbs (potatoes, pasta, rice, cereals) then, ever. It's like a hunter/gatherer diet. But I've never felt healthier in my life.

    All food fads and the latest perfect fiets tend to arise in countries with no real food tradition and where mass-produced shit and fast food have taken hold. See America, the UK and Australia as good starting points.

    See France, Spain, Italy, Thailand, Vietnam, Turkey, Greece etc etc etc etc for the opposite... where no-one is selling fish cock pills as a cure for too many Maccas and they've generally been eating the same ways for ages.

    Looking for advice on with going on a Gluten/Dairy AND Egg free diet. We're doing this for our 7yr old son who has HIGH sensitivity each. He's also high functioning autistic, ADHD, Tourettes, anxiety. We just recently learned about his food sensitivities and also its causing leaky gut.

    We're doing this for 3-6 month and then reintroducing food items to see which ones are causing the most issues for him. We're starting this diet after the new year... and all the options look horrifying to the taste buds.

    Anyone else gone Gluten/Dairy and Egg free?
