For shooting video, (interviews, conferences, documentaries)
What would be the best lens to use on a Canon 7D?
Would love to be able to do some depth of field soft focus.Thanks yall' ..

I think these are mainly shot with 5D with a single lens (50mm).

Longer the length of the lens, more vibration you are going to get hand handle.

I picked up an EF S 17-55mm f2.8 for my 7D - it's great all around lens, great for video. Sharp and bright plus you can get a really shallow depth of field for interviews.

Old manual focus lenses work really well on a 7D/5D with $25 adapters.... and they are smoother to hand focus than AF lenses too....
An old Nikon 50mm F2 AI lens + an adapter for Canon can do really nice work on a 7D, for near lunch money too.... The 50 1.4 Nikkors I've used had rather odd bokeh, but to each his own....
An old Nikon 28mm F2.8 AI has a very smooth manual focus, and turns farther per distance than most other lenses, thus allowing better follow focus....
An 85mm F2 or 1.8 will do nicely, you really don't have to spend $$$ on the Canon 85 1.2... it's nice, but very hard to manual focus..

I just got the Sigma 20mm 1.8 for video shooting. It's nice and wide for that APS-C sensor, but it's not fisheye. It's been ideal for most video, and it's nice and fast. Canon does not make a comparable lens (with that focal length and speed.) It's been criticized for it's softness wide open, but for video that doesn't matter much.
I also have the canon 50mm 1.8. It can be had for ~$80 new. Great lens at an almost disposable price. You can spend ~$350 for the 1.4 or a lot more for the 1.2, but I love the cheap one, it's tiny and super light.

If it's only for video, you could go with 3rd party lenses. A lot of them are great optically, but fall short in the autofocus accuracy department.

get the 50mm 1.4
It's the best value. Especially in your case where your cropped sensor will make the 50 more like an 80. No need for the crazy expensive 85mm.

very,old school, manual focus, but I LOVE the silky focus of a Pentax SMC Takumar 50mm F1.4 for M42 mount.. and you can get an M42 to EOS adapter cheap too....
Try Manual focussing your AF lenses, then manual focussing an old manual focus lens and you'll see what I mean....
