Old manual focus lenses work really well on a 7D/5D with $25 adapters.... and they are smoother to hand focus than AF lenses too....
An old Nikon 50mm F2 AI lens + an adapter for Canon can do really nice work on a 7D, for near lunch money too.... The 50 1.4 Nikkors I've used had rather odd bokeh, but to each his own....
An old Nikon 28mm F2.8 AI has a very smooth manual focus, and turns farther per distance than most other lenses, thus allowing better follow focus....
An 85mm F2 or 1.8 will do nicely, you really don't have to spend $$$ on the Canon 85 1.2... it's nice, but very hard to manual focus..
