markd- it really depends. many times the flash point of the oil wil make the food stick more; not acta as a lubricant.
butter fat has a higher flash point than some oils so it is better at times. depending though, if things are sticking on SS that you do not want to caramelize or scald for flavor, it is most likely you are over too high a flame for either the catalyst, or the preparation.
just my 2 cents.

yeah, Portland has some smokin foods. It stinks about the market. i loved that place when i lived in town. Beautiful building, and a great idea, especially for a town like portland. But, it was badly managed.

- Honestly, the only REAL rule is to not scrub it with soap. You CAN use water, despite what some derps say. I recommend avoiding boiling any water based sauce.monospaced

I bought one specifically for health reasons, cast iron pans are the safest thing for cooking. Almost all cookware releases chemicals and carcinogenic molecules when heated.
If you are still using Tefflon, please stop as soon as possible. These things are carcinogenic.
The only thing to watch with cast iron is your consumption of iron, you can overdose on iron if you cook in it everyday and if you eat lots of food with iron at the same time.

I love lodge, we have a skillet, griddle, and dutch oven, and love them all. The griddle is seeing less use now that we have a proper grill, but its still in the rotation

I can't wait until Bennn learns about how citrus and tomatoes are bad for cast iron seasoning and how you shouldn't simmer sauces in them because it will impart a metallic taste.
It'll be so helpful when he learns something else and shares it with us like we're ignorant fools waiting for our poorly informed saviour to save us.

If anyone is looking to get into using cast iron for camping, the Camp Maid set is top notch.
The lid holder is the best part of the set, and makes a dutch oven so much more versatile. We've been using it to make camping pizzas
