Mushroom Pecan Rice
1 cup uncooked brown rice
2 1/2 cups water
1/2 cup chopped pecans
1 cup mushrooms, sliced
2 tbsp. olive oil
1 onion, finely chopped
1 green pepper, finely chopped
1 tbsp. low-fat chicken base
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. nutmeg
--------------------------------Add the water to a large pot and bring to boil. In the meantime, stir fry the chopped onions in a pan until the onions become translucent. Add the sliced mushrooms and stir fry for two more minutes. Add all the ingredients to the boiling water. Reduce to a simmer, cover and cook until water has been absorbed into rice. Average cooking time is 60 minutes. Let stand for 10 minutes and fluff with fork.

Potato Pancakes
4 medium potatoes, grated
1 onion, minced
1 egg white, slightly beaten
3 tbsp. applesauce, unsweetened
1/3 cup whole wheat flour
1/4 tsp. nutmeg
1 tsp. fruit sugar
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. Bragg's seasoning, or sea salt
1 tbsp. canola oil
-------------------------Add the grated potatoes with all of the ingredients, except the flour. Mix well. Add enough of the flour so that the mixture will stick together. Drop by 1/4 cup into a hot skillet until lightly browned on both sides.

Serves 2
3 tomatoes
pinch of oregano
1 beet
tsp. honey
2 garlic cloves
pinch of basil
1/2 onion
pinch of thyme
1 tsp. Good Tasting Yeast
pinch of sea salt
1/2 tsp. freshly ground pepper
tsp. simulated chicken base (optional)
Blend tomatoes till liquid. Add remainder of ingredients and blend for one minute. Heat for four minutes then add finely chopped vegetables of your choice. Example, green beans, celery, red pepper, or carrots. Cook at low heat for additional 10 minutes. A hardy filling soup under 100 calories per serving. The enzymes will be destroyed because of cooking over 120 degrees but vitamins and minerals will be intact because of short cooking time. This is a beautiful soup because of the bright red color. It has a rich look and taste and is completely fat free!

Hearty Brown Stew
serves 2
2 cups water
2 Tbs. low-sodium Tamara
1 onion sliced
1/4 cup cider vinegar or apple juice
1 celery stalk, sliced
grated fresh ginger
1 carrot sliced pinch of marjoram
1 sweet potato, in chunks
pinch of thyme
4 mushrooms, quartered
3-4 Tbs. powdered oats
2 large cloves garlic, crushed
In a large pot, combine all ingredients, except oat powder. Bring to boil, lower heat, cover, and simmer about 15 minutes until vegetables are tender. Mix oat flour and add to the stew. Stir until thickened.

Yam Crunchies
Peel yams and cut them lengthwise into 3/4 fingers. Cook in oven at 400 degrees for 35 minutes. A slightly crunchy, deliciously sweet, nutritious treat everyone will love. Potatoes can be cut into quarters or eights and cooked with the yams. Cook potatoes till crispy brown. If the potatoes are cooked with the peel part of the wedge on the grill, they will not stick.

Fresh Gazpacho
1 tomato, chopped
2 cups tomato juice, preferably freshly juiced
1/2 green pepper, chopped
1/2 small cucumber, peeled and chopped
1 tsp. onion, minced
1 tbsp. fresh parsley leaves, minced
1 tbsp. fresh basil leaves, minced
1 small garlic clove, minced
2 tsp. red wine vinegar
1 tbsp. lime juice
1/2 tsp. Bragg's seasoning, or sea salt to taste
1 tsp. honey
dash of Tabasco sauce (optional)

Blend all the ingredients in a blender until smooth ~ work in batches, if necessary. Serve immediately.

Pita Pockets with Avocado
2 whole wheat pita breads, cut in half
2 small ripe avocados, mashed
2 cups alfalfa sprouts
2 medium tomatoes, sliced thin
Spanish onion, thinly sliced
1 cup cucumber, sliced thin
1/4 tsp. sea salt
1/4 tsp. onion powder
1/4 tsp. garlic powder
1 tsp. chicken base powder, low salt (optional)
1 tbsp. lemon juice
2 tsp. honey
--------------------------Mix the onion powder, garlic powder, fruit sugar, sea salt and lemon juice into the mashed avocados. Spread the avocado mixture evenly into the halved pita breads. Evenly layer the vegetables into the halved pita breads. Serve immediately.

KEBAB KOUTBANE
Appetizer Kebabs in a Moorish MarinadeYield: 8 6-inch kebabs
This typically Moroccan dish is an excellent hors d'oeuvre to serve at any time. It is amazing how the small cubes of suet improve the flavor of the kebab after some of the fat has burned off. The use of suet is particularly effective when cooking kebabs over a charcoal fire and may be successfully substituted in recipes calling for bacon.Cut 1 Ib. FILLET OF BEEF OR STEAK into 3/4-inch cubes (approximately 32 cubes).
Cut 1/2 Ib. BEEF SUET into 1/2-inch cubes.
In an 8 x 10-inch shallow baking dish, prepare the Moorish Marinade:
Combine: 1/4 cup ONION, finely chopped and
2 Tbs. PARSLEY, finely chopped.
Blend: 1/2 cup OLIVE or SALAD OIL1 tsp. SALT
1/4 tsp. PEPPER
1/4 tsp. GARLIC POWDER
1 tsp. GROUND CORIANDER (optional)
1/2 tsp. GROUND CUMIN (optional).
Blend the beef and suet cubes with the marinade and allow the mixture to marinate for several hours.Thread four pieces of beef alternately with three pieces of suet (start and end with beef) on a 6-inch metal or bamboo skewer.
Grill or Broil using a hot fire, basting occasionally with the marinade.
Arrange 1 KEBAB KOUTBANE on a small plate.
Garnish with TOMATO SLICES and PARSLEY SPRIGS at the side of the plate.
