Southern Ireland Travel?

My fiance and I will be going to Ireland in May for about 10 days. Can't f'ing wait, been a while since we took a long vacation out of the US. We're staying in Dublin the first and last night, and will have a car the entire time. In between Dublin we are staying in the town of Adare, at a villa near Adare Castle.
Anyhow, we leave on May 27th so I'm starting to do more research of things to do. Anyone here taken a trip to Ireland (or live there) and have any good suggestions on not-to-miss destinations? We're planning on driving the hell out of that car, and want to make sure we see the west and southern coasts.

Cliffs of Moher
Town of Doolin - McDermott's pub has traditional Irish music some evenings
Aran Island (rent bicycles and bike around the largest Island)
Muckrock House and Torc waterfall
Blarney Castleetc, etc, etc.
Other than that, we simply drove around and found amazing things at every turn.

Don't miss the Guinness tour. Best view in Dublin from the bar. I'm from there. Feel free to ask away.

Go surfing on the Atlantic too if thats your thing. Apparently some of the best waves in Europe.

Stay here: Amazing - restaurant and accommodation. And on the Aran Islands.

We're staying at Adare Castle, but in one of the villas/townhomes they have there. Looks like some fun stuff at that place - flyflshing, archery, horseback riding, hiking (I'm definitely looking forward to getting some jogging in there), mountain biking. We could stay there the whole time pretty much!
We did get an automatic transmission car with a GPS. I can't imagine driving a stick over there, on the wrong side of the car.

OH Newgrange is pretty cool. Older than the pyramids! And if you organise ahead of time you get get tickets to go inside.

Try score some Slane tickets. who cares if you like the bands. One day you won't forget in one of the best venues on the planet.

if you are anyway into museums etc check out the Chester Beatty Library in Dublin.
It's small and is only (mainly religious) books but I really like it - http://www.cbl.ie/
in terms of out west, a drive around the burren, doolin, ballyvaghan can be good depending in the weather

Powerscourt in Wicklow is awesome. Just outside dublin. you wont regret going there if its a nice day
