I'm working on a new project for a 7" screen tablet (resolution 800x480 px).Ok, the fact is that I'm not sure what size to use in Photoshop for the most accurate real size simulation. If I use a 7" diagonal rectangle, the sceen looks small.. so, any tips and tricks would be welcomed. Thank you.

7 inch? no much bigger.

print it out at 7" to see if the controls look/feel finger sized, or if you need to scale up/down. Likely your tablet controls are going to need to be bigger than typical desktop controls.

* Obtain a 7" tablet.
* Design
* See what it looks like on tablet
* Refine
* Iterate...Done.

but make it in flash.

Just place your screen in the oven and shrink it. A screen is mostly plastic, so it should be just like a shrinky dink.

If you dont have one of the tablets then you should.
You should be asking yourself these questions:
Will the user be able to rotate the tablet? if so is it landscape or portrait?
If no then design to the dimensions...If yes try to have fun with a liquid layout or work with the guy who is going to be building it by using css @media declarations... if he/she doesnt know what those are then tell him to google it.
- Also find out what browser the tablet is using and if it has to work on any other tabletStugoo

1337dpi works best on everything

Well.. jokes apart, is it better to work on a 800x480 px. canvas or a "real size" 7 inch. diagonal one? The first looks larger on my monitor. I'm confused.
Is it important to take into account the resolution of the "document"? (I mean.. 72, 96 dpi... whatever...).
Thanks.- DO NOT INVENT PIXELS. SEE FIRST REPLY. DROP IT!monospaced
- dpi ONLY comes into play with print, dudemonospaced

In the previous post I mean... document = device.
Thanks guys.

480x800 [ WVGA ] Android and Windows 7 mobile...
WVGA (Wide Video Graphics Array) is a common resolution among hand-held internet-enabled devices - use a 4 (or 6) column grid and don't use font sizes below 18pixels.

NEWS FLASH!
PIXELS ARE NOT UNIVERSALLY THE SAME SIZE!
Just use the screen pixel dimensions at 72dpi, stop thinking like print.
