alrighty, what's a nice font replacement technique people can recommend. i've never done it and would love to use an installed font rather than a flash file but i'm open to whoever bothers to write. it needs to be fast and easy (for a simpleton like me).

If you use sifr properly it works well. You can have it degrade nicely, it's good for SEO and the text is selectable.

If Flash needs to be enabled for sIFR to function, doesn't that semi-defeat its purpose?

^^ No. sifr is just a text replacement tool. You have a single flash swf and that translates the content you specify. eg
<h1>This is a test</h1>
If you use sifr, the text between the tags will be pulled into flash and displayed using your specified font. If you don't have flash, it will just display the text with the h1 attributes.
