I see resumé as good opportunity to do a nice & clean grid-based typographic work.
I like to keep the choice of font simple, Helvetica alike but you can use different weight & size to make contrast.
The job of your resumé is to provide the information as clearly and fast as possible and your experience should speak for themselves. A good designer will notice a nice swiss-style job and the office lady will appreciate the ease of read and professional feel of it.
Your portfolio is where you creativity should be showcase.

I just did the job search thing, and I started with my student resume with flourishes here and there... Every interviewer commented that they appreciated that I put a little style into it, but alas no job offers.
I got tired of it, and went for a "clean" type only look(still designed though) and nobody commented on it, though I landed a job with it.
???? I dunno.

My resume is 3 pages in Word. I never really thought of the lameness of lhaving it out in Word. I work in UI/usability for the IT industry so it has never seemed to matter.

I was serious. I've seen designers send word doc CV's into places looking for work. May as well label it 'cockhat_do_not_bother.doc'

Make sure to run spell-check. Make sure your paragraph rags look good. Avoid break-
ing words with dashes, if you absolutely have to then no more than 3- per-page. Any more than that looks real-
ly sloppy.

lay it out in InDesign. Not Illy. Illustrator is not a page layout program and doesn't have the wide array of type tools that InDesign has.
It should be 1 page if you have worked 3 jobs, never more than 2 pages even if you've worked at 17 places.
Design it of course but don't make the design distracting. By all means use good fonts, but good typography matters more. I've seen resumes with plain-jane typefaces that looked great, and resumes with good typefaces that were handled poorly.

create/edit in word for grammar and spellcheck, then import into InDesign for formatting.

Actually, I use word for grammar/spellcheck. I'm not a complete idiot when it comes to writing, but when I'm tired or in a rush (which it always seems like I'm updating my resume in one of those states) my typing skills go downhill fast.
Then I copy/paste it into Illustrator.
