lay it out in InDesign. Not Illy. Illustrator is not a page layout program and doesn't have the wide array of type tools that InDesign has.
It should be 1 page if you have worked 3 jobs, never more than 2 pages even if you've worked at 17 places.
Design it of course but don't make the design distracting. By all means use good fonts, but good typography matters more. I've seen resumes with plain-jane typefaces that looked great, and resumes with good typefaces that were handled poorly.
