can somebody recommend a smoker? christmas is just around the corner. =)
lately i've been enjoying pan fried ny strip steaks. (i cook 'em outiside using the side burner on the grill because it's quite smokey)
2 ny strips at least 1 inch thick (1 1/4 - 1 1/2 even better)
lightly coat steaks with olive oil and sprinkle with coarse kosher salt, fresh cracked pepper, and finely chopped rosemary, both sides
add 1 tablespoon butter and 1 tablespoon olive oil to pan (cast iron probably best but I use a heavy all-clad skillet)
put pan on burner on high
once butter has melted throw on the steaks and DO NOT TOUCH for 4 minutes
flip and cook for another 4 minutes
above times are for medium-rarethe steaks come out with a beautiful, crispy, and delicious crust. so damn good!

- i think i'll go with a starter smoker too. looks good. are there vents to regulate the temp?grunttt
- no, not really. you want to do that with density of woodchips. around 120-127F is where you want to be smokin...madirish
