Nice Calles, sounds real good.
I got these grill grates with circular holes about the size of a dime in them. I grilled fresh green beans, mushrooms with lemon juice and parmesan on Monday.
I can grill anything on these new grates, no more cooking anything indoors.

chimney starter for both. trying to stay away from any sort of lighter fluid. I'm using the old fashioned briquettes btw.

slow cooked baby backs.
rub down with brown sugar, salt, peper. site for at least 3 hours.
cook 2 hours on low indirect heat. start basting those bitches the last 30 mins with bbq/vinegar sauce

im just gonna make Fish ceviche... too many people get picky with the Shellfish and my partner for the party is allergic to it.... ill make sure the chimichurri is kicking

gotcha. i do not use lighter fluid either- that shit gives off bad stuff.
to be honest, i love using the natural, kiln dried hardwood sold in bags at Whole Foods. I am sure it is available other places, but basically, it is scrap hardwooods that have only been shaped/cut but never treated in any way sourced from furniture, woodworking facilities that is then kiln dried. works awesome and is like 4 dollars for a huge bag of it.
that shit lights up almost as quick, and waaaaaaaaay hotter than any gas grill, i swear. not the time part, but hear for sure. i got an old grill of mine up to ~ 700F one time using that stuff and doing fresh pizzas on a stone on the gill. nutty how fast they cooked and got the most awesome crispy flat pies.

hahaha- i figured you would be making a Ceviché de Pescado, but was curious from which type of fish? Gruper makes a wonderful ceviché...
and those pans for the grill work nice dobs- but bend super easy. i have melted a couple over several hours of sustained grilling... nice for large bone-in roasts as well, as the entire piece is supported once it begins to break down.

good for you brains, glad you are enjoying yourself. I deep fried a turkey on the 5th, 15 and 1/4 pounds. Didnt last an hour for all the peeps that were over. also smoked chicken quesadillas finished on the grill.
