George Wilson

George's secret to being the best lies in using oak, walnut and hickory wood to fire his brick oven...and a sauce that dates back to his ancestors who were slaves here in the U.S. - nothing but the best goes into his product. After 46 years he knows how to make BBQ. Now that he's 77 years old he thinks about retiring, turning the business over to his daughter.

Are there other people here than me, not using a gasgrill?
I can recommend a mix of regular firewood and dry apple tree. Other fruittrees will do too, try you way around. It give the meat a different, but nice and smooth flavor!
It takes time to prepare compared to the instant gasflame, but you will be amazed how good it turns out.
Once you try it there is no way back

Alpaca fillets brushed w/ fresh Ají, olive oil, garlic and minced bacon; let to rest for no more than 30 minutes.
grill on direct heat 'till medium temperature is reached and remove to cool, but not before topped w/ crumbled Queso Fresco and rough-chopped basil and tented w/ foil.
pair with grilled avocado and tomatoe halves along with that caramelized onion polenta you made earlier.
i'd sip a crisp Chiléan Cab or Malbec, but that's just me...

spent the last part of a 25 day trip in the jungle near aquitos. Rented some motorbikes and cruised around, kayaked on the amazon, visited the shamen for some vision quest, had real bad squirts. That's about the gist of it.

dang it, wrong thread

I have a gas grill... it sucks. First gas grill I have ever owned. It really defeats the purpose of what BBQ'ing is all about.

I'm going to remember this when I own a house
