BBQ perfection for me is Yakitori, go to a dirty side street in Tokyo, and you'll find a smoky old Yakitori - they're numerous. They might hold up a sign that explains essentially no foreigners, as the menu is in Japanese and they can't be assed with you.. but push in, order Sake, order everything, eat perfection. Pro tip when you get home and try to recreate yakitori - fill a little muni spray bottle with sake or miring, spray regularly on your skewer of meat/mushroom.

portabella mushroom caps stuffed with italian sausage and fresh basil, drizzled with olive oil. Simple, cheap, delicious and impressive.

I just made bleu cheese hamburgers for people and everytime I thank this thread and diggedy dobs, because they are amazing and I would have never known.
You don't even need condiments, though I do add lettuce and tomatoes.

you gotta buy some fresh jalapenos, big ones.
slices them and squeeze them open, core the seeds and veins out, stuff them with mexican chihuahua cheese or whatever is your favorite cheese.
wrap them in a strip of thick cut butcher style bacon
poke two toothpicks through them to hold them together.
grill for three minutes, flipping once during cooking.
if you make that with the chihuahua cheese burgers using the same tech as the bleu burgers hoes will be trippin

just slice one side of the jalapeno, so that you can gut them without losing thi pcoket for the cheese. Sorry

get some rubber gloves too, seriously it hurts if you get all of the pepper innards under your fingernails or in your eyes. My arms burned up to my elbows the first time I did them. I saw the recipe on the food network and tweaked it a bit.

all charcoal yesterday, the jalapenos wrapped in bacon were a smash fucking hit. met a little chica that was imressed with the menu and things are looking good.
ps, nothing wrong with gas grills, buy a smoker box and you punks couldnt tell the difference. :D

Made my first 'burgers of the year for a Barbie last weekend and am just now looking up methods for making flavoured oils..
The only thing one needs do with BBQ'd meat is ensure it's room temperature when it's to be cooked and have some salt , pepper and lemon for when the meat gets turned over..
I'm like a cross between Ainsley and Caveman Ug around this time of year..
..MEAT!
