    Alpaca fillets brushed w/ fresh Ají, olive oil, garlic and minced bacon; let to rest for no more than 30 minutes.

    grill on direct heat 'till medium temperature is reached and remove to cool, but not before topped w/ crumbled Queso Fresco and rough-chopped basil and tented w/ foil.

    pair with grilled avocado and tomatoe halves along with that caramelized onion polenta you made earlier.

    i'd sip a crisp Chiléan Cab or Malbec, but that's just me...
