the turks do a good dish - they crumble fried pancetta on top of the hummus which, with some fresh flatbread, lifts it from disgusting arab shit (jadrian_uk) into the realms of haute cuisine.

one thing you could use in repositioning is the fact that you can only get today's hummus, it never lives another day. i don't know if that is done in europe or elsewhere but in the middle east where (real) arabs know how to make that "shit" (@jadrian_uk) this is the basic rule. always fresh "shit". never buy it from a supermarket - that is not hummus.
