Great film, I saw it in the theatre last spring. He was lucky to be able to shoot these buildings before the surroundings got so cluttered with development.

Yes, he definitely used one of the highest end cameras available.I think when he says "it's the least important element" he's purposely exaggerating just to make a point of how important composition, contrast, color, tone, balance, use of light/shadow etc. is. Might as well add to the list how a photographer relates to clients, subjects & crew on set too.
The camera is important, but so is every other detail that goes into creating a great image/shoot.
