Why do we bother creating identities and marks when all people want is cheap stuff, stuff that works etc. Why is anyone considered a good designer if he makes beautiful things and a bad designer if he's hubb7designs?

though they may not notice the exact typeface different, the proper face adds to a designs gestalt. Careful use of typography will make a design 'better' to the average person, though they may not know why.
Also, legibility rates are important to consider. They might not make someone say 'ohhh cool fonts!' but add to a designs ability to communicate.

its all in the interest of telling a story. Tell any of aesop's fables to a child and they can appreciate the story from a literal perspective. Read Aesop's as an adult and you will be able to read into the allegories and metaphors. Great design functions in this respect as well – through layers of understanding.
You can design something that appeals to the audience as a whole - but where the difficulty lies is making it appeal to the niché audiences as well – the historians, designers, industry people, etc... To be a great designer requires GREAT empathy.

as much as I preach this (to stubborn clients) myself, I think it's bullshit. The average person won't feel better if you choose Arial over Myriad. Arial is veeeeery legible too.

Just because people can't see the difference between two fonts, that doesn't mean it doesn't inform them on at least a subliminal level. Like people, fonts have personalities, and the inability to point out or differentiate between different individuals doesn't negate the existence of distinct features.
It's like colors in someone's home. People often don't notice them until they clash. I think it's our job as designers to avoid dissonance, as opposed to enforcing our particular sense of style... that is, unless we're hired specifically because of that style.
