I usually make them sign and return the doc to me.

What's the minimum project cost before you have a lawyer review the documents?

You can use basic template documents you fill out for most average jobs that were originally viewed by a lawyer. If a project is rather large or unique, than have the documents custom drafted.

What baseline said. Proposal; come to agreement on price; modify proposal if needed; get signatures; proposal then becomes a contract. Then immediately send invoice for retainer to get started.
Otherwise, if it's a smallish job and a client that I know/trust, I simply track my hours and send an invoice when finished.
