I client asked me today if I can help him with some aerial photos. I've done mostly food photography.
Should I take a telephoto or a EF 28-135mm f/3.5-5.6 IS lens?Thanks.

I would take primes and get the pilot to get you at the right distance for what you need. Just take all your lenses?

Just be careful. I fly a cessna 172 and the tendency is to fly at dangerously slow speeds and low altitudes to get the shot...a reciepe for a deadly stall. Actually that happened this last year here with some students studying and taking photos of migrating birds...too much equipment...flying on the edge of stall speed, low altitude...bad day.
don't want to scare you but...Helicopter...the way to go for aerial photography IMO.

you don't have to fly slow to fly low ... I fly with a commercial pilot all the time. Just make sure the pilot is experienced and get a clearance for arial work. You'll have a blast.

Telephoto probably the way to go, but take your primes.

After trying several lenses we ended up just using a 50mm and a 35-70. Even a 35mm was too wide, and tended to include unneeded parts of the airframe. Any of the lenses you mentioned should will work fine, but the extra resolution of a prime is nice, too.
The only person I know who did this for a living (I was in the AF at the time) charged expenses + $50 per shot, prints extra, but then, he was focusing ;) on factories and businesses and mainly did it to help pay for a rather expensive hobby (or "hobbies" if you include flying).

I recommend having the pilot remove the door and your seat. have an assistant in the back with your equip. bag to hand you stuff when you need it. remember to keep your eye on the horizon because you WILL get dizzy cause of the parallax with the plane and what's in your eyepiece. and anchor yourself with an extra harness. the wind blasts are like nothing you've ever felt, even going 65 mph 500-600 feet in the air.
