its not really a great design. The layout could be more interesting in the sense that a more creative use of grid would be better. The use of typography is ok.

Lack of imagination on that first website. You can have simple design, but to make it look good is anything but simple, sometimes. Endless layout and type decisions, finding a good gird that works, small design details that add to the design but without distracting from the layout, all these ideas come into play with minimal design.

The problem is that some people do not understand the notion of a neutral presentation for some types of content. And that the "design" does not always have to scream out loud, just for the sake of looking cool.
It's the difference between someone who likes Michael Bay or '300' kind of Hollywood crap and someone who likes Michael Haneke movies. If you are the kind of person who does not see the value in both, you are probably young and just need to grow up a little.
There is more to the world than just designing cool "containers". It's also about the content. And sometimes, it's more about the content and the container should just be a paper box -- not some kind of silly brushed metal spaceship.

rxphoto your missing the point. We designers should always consider a relevant design for websites. As a designer we always want to achieve the best result. So push things forward creatively. You can have a subtle elegant design, its just that the examples you have listed dont tick any of those boxes. Take a look at this site http://www.icodesign.co.uk - a simple clean design that using interesting layouts and grids for all the pages. Look and learn

Not slick ultra-minimal design that goes out of the way to look cool. Besides, that website is in Flash and annoying as hell. You can't even bookmark anything. In addition, none of the content is crawlable by Google. Only the top level is visible to the spider:
