You have 8 slots in the Mac Pro, I wouldn't worry about waisting them. Take the 1gb it comes and buy 2 or 3gb more from someone else.
Also keep an eye out for the heatsink apple recommends you put on each stick of memory. I'm not sure if third party retailers include those.

my friends mac book pro got so hot it warped the battery plate on the bottom. be wary, the pros run hotter than the macbooks. look into laptop fans to extend the life.

damn, i don't know what you people do with your computer...
i am happy with 1gig, may update to 2gig. unless i do some really heavy 3d or AE stuff, i really don't think i'd need more than 2gig.
also, cs1 runs fine on core2duo and probably better than cs2.

I've got 2GB in my Mac Pro. Runs CS1/Flash/Dreamweaver fine. Also runs WoW extra nice with the Radeon 1900.
2GB if fine, and 4GB is nice, but not necessary if it pushes your budget too far.
The 7300GT is pretty sub-par as far as video cards go if you plan on gaming at all. However, the 1900's fan get loud during heavy load, so you might want to consider getting an aftermarket fan for it (Zalman makes some nice ones).
The drives are pretty comparable speed-wise, but since drives slow down as they fill up, the 750GB drive will stay faster longer.

2x 7300's will only allow you to run more monitors. OSX doesn't recognize sli. i've 2gb in my mac pro but have ordered 4 more from these guys:
http://www.transintl.com/store/c…with the mac pro, if you only have two memory slots full or if you've got two 512's and 2 1gb's you'll lose speed as it won't be running in quad-channel mode. i've heard that the speed lost is hardly noticeable.
When running AE and PS at the same time i was average 1:2 page ins/page outs, not good. the adobe apps will easily go through 2 gbs, even running PS and illy you'll be accessing the hdd pretty regularly. so get as much ram as you can afford.
as for the hard drives, you can get them from new egg for way cheaper than apple.
if that doesn't make sense, i blame the lack of coffee.
