2x 7300's will only allow you to run more monitors. OSX doesn't recognize sli. i've 2gb in my mac pro but have ordered 4 more from these guys:
http://www.transintl.com/store/c…with the mac pro, if you only have two memory slots full or if you've got two 512's and 2 1gb's you'll lose speed as it won't be running in quad-channel mode. i've heard that the speed lost is hardly noticeable.
When running AE and PS at the same time i was average 1:2 page ins/page outs, not good. the adobe apps will easily go through 2 gbs, even running PS and illy you'll be accessing the hdd pretty regularly. so get as much ram as you can afford.
as for the hard drives, you can get them from new egg for way cheaper than apple.
if that doesn't make sense, i blame the lack of coffee.
