I find the knife too menacing for a logo, unless the brand is supposed to feel menacing. In this case, it doesn't seem like it should.

I think the combination of varying skill-levels around here and anonymity creates an environment that isn't conducive for a thoughtful critique. That being said - here's mine.
The ribbon you're making isn't terrible and could possibly live on its own. Because the name of the place is "The Cut" I think showing a knife is kind of saying the same thing twice. If you feel like you want to show something other than the ribbon (and I'm only saying that because I don't see any other concepts) I would maybe try and work in something that is location, specialty or uniquely specific about the establishment.

Which steakhouse in Dublin is the one with the great black and white photo ad that's always in the Aer Lingus magazine? It's just a guy in a bloody white t-shirt with a cleaver. I love that ad.
- Ha! I am the sometijes deputy editor, editor-in-chief of that magazine, it's called Cara. The ad you are talking about is for Marco Pierre White';s restaurant in Dublin. You are right, it's a great image of one of the world'st influential chefs. he has actually given me an incredible quote for the back of the book: "'eoin' is someone whose opinion I trust".eoin

I think you need to think about what you mean by "the cut" - as I can understand it, it's about making a "best-of" list - so these outfits are going to "make the cut" (as in golf), making the grade etc.
the logo needs to reflect this aspect of it more. Many of the suggestions you've had are good, but they're more about cuts of meat or butchery than this type of "cut".
your first ideas looked too much like a restaurant logo, but now you're in danger of wandering into barber/tailor territory with your latest iterations
one idea might be to have a simple logotype applied over images of raw food ingredients being prepared, where the old leaves/bones etc are removed leaving only the choice bits
