What's the best way to do it nowadays?
Text with an image, rich text, plain text, just an image?

please use plain text and try to convince clients to do the same. Only use more complex stuff if client really really wants it.

I've found that clients quite often create their own logos to add to email footers. These are usually horrible versions of their logos, badly cropped/resized/anti-aliased(or not).
If you are doing branding/comms work for them then you should be advising they get rid and go with your solution.
Text only is best.
Logo if they must!
