i think theres a actual difference in video quality, where youtube makes all the formats possible following a compression guideline (240p to 1080p) and vimeo has a more robust video compression, where quality is over file size.
so for quality video content you should go to vimeo, and for content that is not so visually oriented (like weekly shows) and you want to grow a user base, you should go to youtube

I think of vimeo as positioned for more serious filmmakers and digital artists who plan and cut more professional pieces; Youtube for the unedited 99%.
But, Vimeo has bandwidth restrictions. So if you create something that's widely shared, you may run into additional fees, or being unable to serve your video (I think.... never had to worry about this personally).

Im not sure if it still the same, but Vimeo used to be solely just for artistic purposes, and non commercial direction. On Youtube you could use it for money making purposes.
Also Vimeo promotes artistic endeavors by its staff. Youtube focuses more on views and likes.
