Just use a textured brush and a layer mask and do it by hand. For more gritty look, you can use a Pencil brush or sharpen the layer.

Thanks - I saw this grain tutorial and tried it out, it just doesn't seem to come out with the right look when it's scaled up like the youngjerks stuff.

The effect makes me think of the dissolve blend mode in Photoshop, you can get something close. But yeah I would say a brush would be easier.

Create a gradient in photoshop.
Noise filter. x2 or x3
Export large and to a flat jpg.
LiveTrace in Illustrator and adjust for the look you want.
Mask as applicable.

Back in the day we just used charcoal on watercolor paper to create the gradient and scan them in. Then it's just black & white tiffs.
