I know this isn't graphic designer exactly but maybe have them draw and develop a font. either each kid gets a letter or each kid does thoe whole alphabet or divide them in groups to work on a set a of letters and numbers.
Then you can digitize it for them and have them work on a poster using the typeface.

I did a project with my kids where they designed, cut and sewed their own ugly style dolls. The youngest was 4 and still did a great job and loved it.
Supplies are cheap at a sewing store. They also picked out all their options, color etc.
No exactly graphic design but fun for kids.

show them how basic shapes make up stlylized objects. birds, cat faces etc. and have them make their own.

How about you have them draw/design/layout something nicde and have them silkscreen it on posters, shirts, etc. This would really get them interested and excited.

have the each draw up 10 unique banner ad concepts. once done, shit on all of them and demand 'big ideas'.

I would give them a short overview of what design is ( a cool process flow chart would be fun) and maybe present adobe cs to them to show them what PS, AI and IN are for.
If you have more time and multiple sessions teach them the elements and principles of design.
A cool exercise would be to premake elements, a headline, body copy, images and graphic shapes and what not, have them choose a mood or message and pick the elements they will use to make it. Have the kids keep the mood/message/theme they pick secret and have the kids comment on what the outcomes communicated to them.

also I would guess there are students in 6th grade who already do some simple desktop publishing/design on their parents computers...

Start off with some basic definitions:
What is a font? How and why are they created?
What is a logo? What and Why?
What is a website?
I doubt anyone in 6th grade has a clue about what they are. Explain what the differences are, maybe showing them how you can create two completely different 'looks' with the same text.
I've gotten my nephew (he's in 4th grade) excited about Photoshop and SketchUP. I just showed him some basic editing tools and the layout, now he can just have fun playing (like he's taught himself how to make a skate park in 3D in SU).
Keep it fun and simple. duhdesign has some good ideas above.
