Almost everything I show is from side projects, or Client Round 2. Anything beyond that, the client had their way with, and I died a little inside.

now that you mentioned it... I also have a lot of projects that well, client fucked up and won't put up on my folio... is it OK to show YOUR version???... You know the one you presented, pitched and still think is the right one?

I have and still show conceptual work in a portfolio.
I've played both angles when presenting the work - i usually gauge the interviewer and/or client when deciding whether or not to reveal if it's conceptual or didn't make the final cut.
If i decide not to talk about it then I leave it at that. If I do i'll be upfront and tell them right away this piece was not selected by the client but I felt strongly about it so continued to develop it for the following reasons: blah blah.
I think it's always appropriate to show your best work in your portfolio, whether or not a client signed off on it or not. However, I think you can (and should be) selective about the way you present those pieces.

after 15 years of clients fucking up my work, i've taken it upon myself to go out of my way to fuck up the work BEFORE they get a chance to fuck it up. logos 400px x 350px centered in the header. massive links and blinking text. the hero image is a giant facebook icon to help activate the audience by giving them compelling social experiences and encourage advocacy. i take pride in applying absolute fuck-all to my work and the clients eat the shit up with a spoon.

Side projects. Pick which ones you take carefully and be up front about the fact that you can't work to a deadline outside of hours and that it needs to be creatively worthwhile or you. If the client is happy with that it's a keeper.
Day job stuff always has a lot of people involved, an the more people are involved, the more conflicting opinions and ideas there are, so it's only natural that the final product will be compromised to some degree.

Just started working in an awesome agency who get cool clients because they do really creative work. I'm thinking that a lot of the work I do over the next couple of years will be portfolio worthy

At my day job I'd say that less than 1 of 10 make my book. As a freelancer maybe 5 of 10 do.
