Given that any such option would be easily undoable, you could just link an image (background or header, say) from a different server which you have control of, then change that if the need arises.

Not expensive if your in the right they pay costs, nothing wrong with chasing your money through a legal route, it's professional I bet even the client will be impressed with your professionalism. It doesn't usually get that far anyway.

host the content (images, videos, txtfiles) on a server you own, once paid, move it to their site. otherwise rename the directory. done.

For Flash files, you can put in a clock/calendar check that set the site Alpha to %0 at a certain date. Make the date 3 weeks past when the client agrees to pay. When they pay you will need to republish the .swf with that functionality turned off. This works nicely.
The main thing is to have a bullet proof contract with payment terms clearly outlined. And if you have a gut feeling someone is going to be odd about money, they probably are. If it seems to be the one area they never really want to talk about, there is a reason for that.
Someone owes us $3.5 k right now, and my partner on the project says to just eat it because it is a small amount, but I am stubborn and am thinking of going to small claims court. Which will take time and be a pain in the ass.
