Kuro Obi (Black Belt) is not really a 'fighting' movie, but is probably one of the best martial arts movies you'll ever see.
It was filmed with 5th and 6th Karate Masters. Watch the behind the scenes as well and you'll see exactly how hard they are going in most of the scenes.

Depends on what you mean by "Fighting movie"..whether your looking for kung fu flicks, or movies that inspire a strong fighting spirit. I kinda outgrew the first category a long time ago except for the classics (The Bruce Lee canon, Jet Li's early to mid period stuff..) and seek out the later. For that:
- All the aforementioned Brice Lee Flicks
- Patton
- Any Kurosawa flick
- When We Were Kings (Ali-Foreman Kinshasa Fight documentary)
- Twilight Samurai & Samurai Fiction (two great reinventions of the samurai genre in the last decade)
- Red Belt
- 300
- Fight Club
- Black Hawk Down
- Ghost DogAnd though it's historically flawed, and it's *choke* Tom Cruise, I thought Last Samurai was actually pretty good
