it really blows my mind how the steak goes from burnt to raw

Looks like you got the functionality in place, but cmon, you should know better than to post here if it's not done;)
Start with a basic grid so that the layout is consistent and go from there...it's all over the place right now.
Also pixel text is meant to be displayed at a set size.

Being REALLY picky here, but why is the "News" background field rounded, but no others? :(

I think you've got some nice work to show - the artwork section looks like it could be really interesting and cool, but you put that last. You put a 'coming soon' (motion) as your first item!
I reckon those flash transitions, and the loading / waiting, are going to cause a lot of people to give up.
If I was you, I'd dump your flash website - it's not doing you any favours and it's frustrating to use. I'd create (yet another) indexhibit site. Maybe too many people use them, but at least this format shows off work in a simple / accessible way.

the page margins are weird, why not just center the site? why do I have to click, twice before seeing any content? your news page seems to be more of an about page. your about page is more of a resume. it takes multiple clicks to see any actual work. why is your print work pixelated? the typography is harsh, doesn't feel like it was thought out. the branding of your blog looks nothing like the branding on your site. also as lukus said, focus on usability.
either way, it shows you have ambition which can be promising

let's calling a spade a fucking spade shell we!? it's not good.
to start with, the site should just load up without needing to click on a logo and then a nav item just to see anything. what's with the fucking logo on it's own anyway? why not go the complete 1996 format and include "this site requires flash 4. enter or download here".
secondly the design is shite. it's lookinhg like a 1998 interface and an average one from even then. reduce it all back to it's basics.
the questions arise:
- why is the work navigation a larger point size than the main nav? it looks like a fuckup.
- why is all the work so fucked up? i'm guessing you brought it into flash and resized up or down there. bad call. import 100% png files with transparency from photoshop and you'll get the right results as well as better optimised files.
- why is that type at the top animating a rainbow? it's a healthy reminder of what sucked about bulletin boards in '96. animated fucking rainbows. next they'll be blinking text.
- if you haven't got work ready for a section yet then leave the section out. (ie: motion and web)
- use some details of the illustration to pad it out. that 'familia muertos' artwork is great. use that some more.the key is to play to your strengths. interface design aint it - yet. so use a simplified (even pre-built flash file element or indexr). let your work be in focus not a dodgy flash site.
just my 2 cents. i could be wrong.

Make the whole thing a steak. Build your site around a steak grilling theme.

Absolutely and thank you airy.
I would not have posted on here if I didn't want to ripped to shreds! Like I posted above, my friends, designers and non-designers all gave me the typical art school "umm... I like it, it's awesome doood!" Which is great for my self-esteem issues, but I want to know my weaknesses and get better at web design.
This is pretty much my first site design, and I want to learn as much as possible. I've been a part of the News Today / QBN community since 2001 (JazX days lol) and I know how harsh / snide / sarcastic / brutal you all can be. Most people that post their sites for a crit up in here usually just reply with a thanks! and run away crying. I have a hot wife and a blonde-haired son named Julio to support and another baby on the way- so I want to learn this shit hands down. Thank you all, I love you and keep it coming. You can bet your earthly asses I take all your suggestions to heart and will use them to educate myself further.
