What's your cooking area like? I ask cuz it's summer and small kitchens get crazy hot. So, you know, might want to avoid things that take 4 hours to slow cook in a giant pot.

Here was a recent tasty solutino for the whole weekend.
Made a bunch of thin sliced chicken cutlets, breaded in panko bread crumbs.
Set aside a stack of those.
Take the other stack and slice them up after cooled. Combine with a tomato pesto pasta salad. Add to that grilled peppers, onions, and whatever you like. Cook up some pancetta, toss that in, good flavor. This will last several meals.
Now go back to that first stack of cutlets. Grill (via real grill or grill pan) up some slice eggplant, slice some fresh mozzarella. Place the combo on sliced baguette. You got a stack of paninis now.

baked, herb stuffed salmon. Just need salmon filets, olive oil, fresh dill, fresh basil, fresh parsley, lemon.
Cut the filet in half, and season the skin sides with salt, pepper and olive oil, do the same to the flesh sides. Then pile fresh basil and dill on one half of the filet, and the zest of 1/4 of a lemon on the other, stack on top of each other, tie together with kitchen twine. Top with 2 slices of lemon, and fresh parsley.
bake at 350 in a pyrex pan for about 20 minutes. In that time you can make rice or salad or whatever else you need. It's tasty and moist.
