Pisses me off when people are trying to talk-up the amount of something by just using the word "over", then subtracting one from the amount..

Strictly, using the unprecise term 'over', should only occur where the amount being stipulated is represented unprecisely itself.
"Plumber with Over 50 years Experience". Here, the 50 has a +- 5 year error. It is redundant - and here's the really significant part - it REALLY PISSES ME OFF to say something like "over 51 years experience".
No, you fuck-wad, just tell me how long the fucking plumber has been traipsing through people's front rooms with their shoes on, eyeing up your wife while you're at work, and generally being invertedly snobbish about your house and yard, for.

I think stuff like this works when you're in say, the attorney/lawyer/precise fab work/lab work. Because it does mean something when you say, "over 100 years of combined experience" that's grouping everyone's experience, but that always changes so I doubt they'd be the ones to say, "over 101 years of experience," they probably just pick a nice, big, integer.

You're saying that you don't want to be that precise by prefixing the amount with an 'over'. So to then go on and use a very precise figure, eg 7, or 157 is ludicrous.
If he were alive today, controversial ex Queen frontman Freddie Mercury would have been far more vocal than I, and probably worn an outrageous leather one-piece that emphasized his man-parts using textured fabric inlays and highlighting appliques when he voiced his growing displeasure with the current trend in formulaic hyperbolic expression.
