Half pound of Farrelle pasta cooked until al dente
over low heat add half cup of oil packed sundried tomatos, half cup pitted olives (your choice what kind) Mince both Tomatos and olives. half cup of heavy whipping cream. Add all this to wide sauce pan cook very low heat til turn pink add pasta to sauce stir in and serve immediately.
Gourmet in 12 minutes (not including prep time)
Reall panty dropper for us bachelor folk.

Pasta with Chicken, Sun-dried Tomatoes, Gorgonzola and Pine Nuts

INGREDIENTS
* 1/2 cup chopped drained oil-packed sun-dried tomatoes (2 tablespoons oil reserved)
* boneless chick breast or chicken sausage (meat out of casing)
* 1 box whole wheat penne
* 4 garlic cloves, minced
* 1/2 cup chopped fresh basil
* 1/2 cup canned low-salt chicken broth
* 1/2 cup crumbled Gorgonzola cheese (about 2 ounces)
* 1/4 cup chopped prosciutto or 1/2 cup diced pancetta
* 1/4 cup pine nuts, toastedDIRECTIONS
1. Heat 1 tablespoon oil reserved from tomatoes in heavy large skillet over medium-high heat. Add chicken sausage to skillet and sauté until cooked through, about 3 minutes per side. Transfer chicken sausage to plate and cool; do not clean skillet. Then do the same with pancetta. Cook, and transfer to a plate with the chicken sausage.
2. Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; transfer to large bowl.
3. Meanwhile, heat remaining 1 tablespoon tomato oil in same skillet over medium-high heat. Add garlic; sauté until tender, about 1 minute. Add sun-dried tomatoes, chicken sausage and pancetta (both already cooked), basil, broth, cheese and pancetta to skillet and bring to boil.
4. Add sauce to pasta and toss to coat. Season to taste with salt and pepper. Top with pine nuts and serve.

Taste the dish before seasoning with salt. The gorgonzola and pancetta might be enough. It was for me.

Pasta alla Putanesca -
28 oz can of tomatoes
6 chopped anchovies
2-3 gloves of garlic
1/4 cup chopped black/kalamata olives
1/4 tsp red pepper flakes
2 tbs capers
olive oil1. Cook garlic, pepper and anchovies in oil until garlic is golden and anchovies disintegrate.
2. Add tomatoes and remainder of ingredients. Bring to boil, lower heat, and simmer while you cook your pasta.
(note: recipe is from memory - exact proportions may be off)
