http://php.net/ is your best resource for php functions.
type in php tutorial in google, you will get a ton of good resources. There isn't a specific site that with a ton of tutorials (i think).
Buy a book for cheap. Thats all you need.

how hard would you say it is to build a portfolio using php without any prior knowledge?
something that resizes/crops images and is easy to update.

A good way to start with PHP is to install some open source products like Word Press and play around with database interaction and different functions.

They exactly describe what you need to do to put together a simple (non DB) page which could be useful for a basic portfolio, etc.

if i remember correctly you have a mac, which already has apache and php installed. you just need to start up apache by enabling personal web sharing in system prefs > sharing. this will let you test everything locally. for the latest php version, i suggest going here:

there are also mySQL and postgreSQL installers there so you can play around with DB stuff as well.

I hesitate to whole-heartedly recommend this book, because I haven't had a chance to spend much time with it, but I bought it and from what I've read so far its good.
