while off topic, i feel this is a good time to bring this up-
does anyone have a tried preparation for a red white in-folded mashed potatoe dish? i have this idea to infuse some velvety mash w/ a scallion/rosemary/cab reduction, but am thinking it may be overpowering.
any thoughts?

not sure, mad. sounds awesome though. I have been using dill in mashed potatoes in place of rosemary lately.
Also, if you have never tried it, russian sage and potatoes is excellent.
Planted a russian sage plant at my mothers, ten steps away from the grill. Smells good, tastes good and is also a pretty attractive looking plant.

it'll be like posh champ. be sure that you just lightly fold it in so that there are like swirls of the reduction throughout.

oh i love russian sage dobs! i have the same plant in our new house strangely enough! fantastic fried in e.v. olive oil and served as a finishing item to plates as well.
i am going to para- not worried about it really, but just wanted any isights of it cause i thought about it and am hungry. : ) i was thinking the very same thing in folding it in smoothly to give them a marbley/pillow-y feel.
man, time to pan-fry/oven finish these duck breasts i have and have a nice breakfast! ;)
