while off topic, i feel this is a good time to bring this up-
does anyone have a tried preparation for a red white in-folded mashed potatoe dish? i have this idea to infuse some velvety mash w/ a scallion/rosemary/cab reduction, but am thinking it may be overpowering.
any thoughts?
