pick meat of choice (i prefer chicken or salmon), fry up an onion and some garlic, add meat of choice, add sliced up peppers (paprika for you euros), fry for about 5 minutes, add pineapple chunks or cut up mango, fry for a minute or so, dump in a can of coconut milk (or two if you're making a lot), add at least two teaspoons curry powder (more if you like it hot), stir it up. Add some basil leaves (fresh) and after 20 minutes some snow peas/peapods. Then let it simmer for another 5 minutes and serve with rice. Done and done, pretty much foolproof.

very basic, very good.
two apples

curry (the good stuff, like from the iranian store)fry (loheat, lid on) peppers in lrg sauce pan till soft, then add apples, cook till soft.
sep. frying pan - same time cook chicken. after done remove and cube. add to peppers and apples. add curry (and flour and water). mix it all up.
serve over rice (of choice) with chutney on the side.

If you can't get galangal don't worry as this recipe also has ginger in it. Use desicated coconut in place of kerisik. Cook it real slow and allow 3 hours simmering rather than the 1.5 to 2 hours the recipe suggests.

THAI GREEN CHICKEN CURRY
approx 750 gms chicken thigh or breast fillets
200 gms green beans
1 cup (250 mls) coconut creamGreen Curry Paste:
3 small fresh green chillies, chopped
2 cloves garlic, chopped
3 spring onions, chopped
1/4 cup chopped fresh lemon grass
1/4 cup chopped fresh coriander leaves
2 tblspns oil
2 tblspns water
1 teaspoon shrimp paste
1/2 teaspoon ground cumin
1/4 teaspoon ground turmericPut all ingredients for green curry paste into blender and process until smooth or if you don't have a blender use the old fashioned way with mortar and pestle.
Cut chicken into thin strips. Chop the beans into lengthy strips. Cook the green curry paste in pan or wok, stirring for about 3 or so minutes until it is you can smell the spices and herbs.
Add the chicken and beans to the pan and cook, stirring for about 5 minutes or until the chicken is just cooked through. Add the coconut cream, stir in and simmer, uncovered for about 3 to 5 minutes or until dish slightly thickens.

Thai Yellow Curry Paste
Ingredients
1 ts Cumin seeds
1 ts Coriander seeds
8 Dried chilies
1/2 ts Ground cinnamon
1 ts Salt
1/2 ts Ground cloves
1 tb Chopped lemon grass
2 tb Chopped shallots
1 tb Chopped garlic
1 tb Yellow curry powderDirections
Place the cumin and coriander seeds in a pan without adding any oil. Dry fry them, stirring, over medium heat for 1 to 2 minutes until they are slightly browned, and give off a roasted aroma. Coarsely chop the chilies and soak in water for 10 minutes. Drain. Pound all the ingredients together to produce a fine paste which goes well with beef and pork.
