in photoshop I have a layer that is affecting everything under it because of its blend mode... is there anyway to make just one layer under that layer that doesn't get affected by that blend mode and stays true to its original texture/color as if it were on top of the blend mode layer?

CS1 and older, click opt+ctrl+mouse click in between the two layers. i think CS2 is ctrl+spacebar+mouse click (i could be wrong).
anyhow, when you do this, you will see the mouse cursor change and show two circles. that is will apply the top layer only to the layer that it is connected to beneath it and not the one's below.

Or, put all the layers you want affected by the blend mode in a layer set. the other layers, above or below, are not afected.

wouldn't it be easier to just put the layer on top?
here's a method:
ctrl-click to select the transparency of the layer you want to punch out. select the top layer which is blending over the ones below, and click the mask button to apply a mask to that blending layer.. ctrl+i to flip the mask and you should be good to go.
