The girlfriend hooked me up with a set of 4 Lodge cast iron pans I'd been eyeing lately for my birthday. As I am the predominant cook in the relationship, I saw this as only a good thing, she likes my cooking and wants me to keep doing it.
Long story longer, I used the grill pan to sear a few pork loin chops last night and omg... delicious.
Same seasoning I always use. Seared each side two minutes covered in a pan oiled and preheated to half heat then put the uncovered pan in a 400 degree preheated oven for another 8 minutes.
It didn't taste like it ever had. So rich and full of flavor. Not juicy but not dry. I didn't believe I'd made it. I didn't believe I'd made it in 12 minutes.

- They're great.. but they can be a pain in the ass to maintain.detritus
- Yep, don't leave those fuckers wetset
- i used cast iron all the time. love cooking with itGnash
- funny enough, i picked up a cast iron pan just this saturday too. haven't used it yet :/scruffics
- Easy to maintain if you know how. Just leave the grease in them. Then wipe clean later with some salt and heat. Avoid water.monospaced
- maintenance is a breeze. when warm... nylon brush & water to clean, pat dry then wipe w/ thin layer of canola oil. I love them!imbecile
- And that ;)monospaced
- Oh man, try it one flip. I don't really eat pork too much anymore, which is sad because I have them on point. Got a bunch of my grandmother's WW2 era pans..garbage
- ..and they're so great to cook with. Brine some fat bone-in chops, add a few pinches of sugar to the brine. Pepper the hell out of it, preheat the skillet..garbage
- ..and then a few minutes on one side, flip and into the oven. Serve with greens and taters. One sear on the stovetop, one sear in the oven. Magnifique.garbage
- Also if your cuts are from a good source, you can forget the old temperature regulations, pull it at 140 and enjoy a delicious tender cloud of pork.garbage

I'll try and get back to you about that in a year or so ;)
I do love them, but boy are they fussy.detritus - Also, top tip - if you need some heavy blunt mass to kill a mouse or a wounded pigeon, DON'T use cast iron. Fuckers shatter like a bastard when hit hard enough.detritus
- noted on the shatter, detritus. I'm fairly neurotic cleaning things I like. my 7 year old car looks brand newimbecile
