Oh Fuck off with the Einstein quote. It's not even accurate. Einstein was actually quoted as saying in the 1941 Canadian Bee Journal:
“Remove the bee from the earth and at the same stroke you remove at least one hundred thousand plants that will not survive.”
This quote:
"If the bee disappeared off the face of the earth, man would only have four years left to live"is unattributed and bunk.
Food would suck in variety, have shortages and cost a lot more, but mankind would survive. BTW what would we miss:
apples, avocados, bok choy, broccoli, broccoli rabe, cantaloupe, carrots, cauliflower, celery, cucumbers, eggplant, green onions, honeydew, kale, leeks, lemons, limes, mangos, mustard greens, onions, summer squash and zucchini...
