Stedelijk museum? eww, last time I went it was terrible. The Van Gogh museum is awesome! Also the Rijks museum is good for Dutch history. Been to that a few times. They are all next to each other.
I haven't run across a lot of "good" food, but for fun things, try Febo when you're drunk. It's a fast food vending machine place.
There are plenty of bars, but my favs are the few bars at the start of Zeedijk (next to Centraal station), t' Arendsnest is AWESOME!! Specialize in Dutch beer, and have tons of really nice stuff. Plus an old school brass bar! http://www.arendsnest.nl/
I also tend to like Excalibur which is in the middle of the red light district. It's a Hell Angels bar/rock bar, but I love hanging out there.
If you want the normal bar recommendations/club areas: Leidseplein, Rembrandtplein, Numarkt.
Lastly, rent a bike. I can't deal with anything if I don't have my bike. I busted the wheel once and it sucked to be without it for a few days >.<
