Do you have any sort of agreement about prices/project scope? Even if it's just emails agreeing to what you've described for the stuff not covered by a formal contract?
If so, you should still have some sort of case for collecting your money through legal channels. It's always tough when they're giving you other work that is getting paid for though because you don't want to upset the applecart but you can't be expected to work for nothing either way.
Are they local to you? If so, why not go down and speak to them face to face.
If they're not taking you seriously though, you only really have the option of stopping working for them until they pay or taking a hit on what you're owed if it's not too much and making sure any other work is covered by a contract.
