yes. not just gradients but bevels and drop-shadows too.
I'm sure there's theory out there explaining it, but I'd venture it has something to do with the play of light on surfaces being more familiar for our brains to process, resulting in a more immersive experience. Something akin to the suspension of disbelief.
of course many people completely fuck it up. that's where the craft comes in.
