Personally, I still like the printed portfolio. Big but not too big. I use to show print outs of multiple screen shots of web work and it was fine. In the end what really matters is quality of work and talking through the process of your work.
I've used an ipad to show work before and while I was talking through the work, I felt that the ipad was too small. There was a lot of crowding around the device which I felt was a bit awkward.
Anyway, my 2 cents...

those projectors are so low in power/ lumens that you won't be able to show it at an office setting, even if they turned of the lights, because chances are they still have windows and you are there during the day.
If, however.. your next job is at a bar, on a basement with no windows and the interview is at night, then you are good. But why would you even want to take a projector with you if you are interviewing to be a bar tender? are you nuts?

An image is an image, screen or printed. In the case of interactive work it makes sense to show it where it actually lives - the screen. If you are a print/package designer in most cases your images of work will look better on screen anyway, unless you can/want to lug around physical samples.

physical samples get dirty, people don't respect them, and if you're working with known brands then they've probably seen your work without knowing it anyways.
digital presentations on the ipad work well, you can control how everyone sees it and you don't have to spend $200 per book.

If your mocking up designs because you dont have physical printed collateral pieces. Would you still opt for the printed folio/case combo or does iPad make sense for that? Also, how would u present web work on a printed folio?

Anything except putting it in one of those expensive metal cases. Anything. It can be a saddlestitched laser print booklet as long as the work is presented really well. I feel that a hard bound book (now reasonably priced with services like blurb) is impressive and a nice way to hold a portfolio of work. Just avoid plastic sleeves and coated paper, in my opinion. Don't make it too big either (size of paper). Good luck.

I'de just use the iPad, I used to do a printed portfolio in the past, but now I use the iPad too, easier.

I always think it's better to show actual material. As how it's printed and other technical decisions you made are as important as the look of the work you've done.
