Personally, I still like the printed portfolio. Big but not too big. I use to show print outs of multiple screen shots of web work and it was fine. In the end what really matters is quality of work and talking through the process of your work.
I've used an ipad to show work before and while I was talking through the work, I felt that the ipad was too small. There was a lot of crowding around the device which I felt was a bit awkward.
Anyway, my 2 cents...
