Can I presume we are supposed to up the dpi of our beloved 72dpi images?
What is the standard?
Thanks

Nope. Up the pixel size (PPI).
DPI is Dots per inch and is for print.
Retina displays, if I remember rightly, vary between 200 and 350ish PPI. It's similar to print resolution but changing dpi won't fix anything for you, unless of course you use inches/cm for your web sizing. If that's the case then PPI/DPI is the least of your worries.

Generally double up the image size. Whether you force the user to download the larger image at a 50% size, use scripts to decide which image version to serve, or use the @2x file name prefix and iOS devices handle it themselves... that's up to you.
However, Apple is no longer the only game in town with displays like this.
